Corn is high in nutrients, which are extremely beneficial for you. Yellow corn is rich in the carotenoid lutein, a phytochemical with antioxidant properties that can lower the risk of age related vision loss. Age related vision loss is caused by gradual oxidative damage of the retina, and lutein may serve as an antioxidant as well as a filter to protect the retina from the oxidative effect of blue light.

Corn also provides 

  • Vitamin B1 (thiamin): Used in the metabolism of carbohydrates. A cup of corn gives you 25% of your daily need of Vitamin B1. Thiamin is also crucial for brain cell/cognitive function. Thiamin defficiency leads to age related impairment in mental function and Alzheimer's disease.
  • Vitamin B5: helps with physiological functions
  • Vitamin C: helps fight diseases

Corn is rich in folate which helps generating new cells. Corn is also high in fibre, which helps you fight digestive problems like constipation, lower cholesterol levels, reduces the risk of colon cancer, lower blood sugar levels in diabetics. Corn is recommended for people who suffer from Anaemia.

Corn also contains beta-cryptoxanthin, an orange-red carotenoid also found in pumpkin, papaya, oranges and peaches, may significantly lower one's risk of developing lung cancer.

Corn is a rich source of a phenolic compound ferulic acid, another anti-cancer agent which has been shown to be effective in fighting tumours in breast cancer and liver cancer.

Anthocyanins, found in purple corn also act as scavengers of cancer-causing free radicals.

When you buy corn choose ones that are not stored in the sun and preferably covered by husk.
